Ingredients

The following ingredients have 4 Servings
  • 1 2/3 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon matcha (green tea powder)
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup plain yogurt
  • 1/2 cup canola oil
  • 2 eggs (lightly beaten)
  • 1 teaspoon vanilla extract

Instruction

  • Preheat oven to 350˚Fahrenheit. Prepare 10 muffin tins by lining with paper or lightly greasing.
  • In a large bowl, whisk together the flour, sugar, matcha, baking powder, and salt.
  • Whisk in the yogurt, oil, eggs, and vanilla extract just until the mixture is combined without lumps. Pour the batter into each prepared muffin tin until 3/4 full.
  • Bake in preheated oven until lightly golden and a toothpick inserted in the center comes out clean, 20-25 minutes. Cool in pan for 5 minutes before removing to a wire rack to cool completely. These are best served the day they are made.
