Ingredients

The following ingredients have 4 Servings
  • 3 tbsp olive oil
  • 1 onion (, medium)
  • 3 garlic cloves
  • 1.5 pound frozen green peas ((700 grams))
  • 4 cups vegetable stock (or chicken broth (1 liter))
  • 1 teaspoon himalayan salt ((see note))
  • a pinch of pepper
  • 1 tablespoon dried parsley
  • a few slices of smoked salmon (, optional)
  • sour cream (, optional)

Instruction

  • In a pot, heat the oil. Add chopped onion and minced garlic. Sauté for a minute before adding frozen peas in. Cover with lid and let it cook for 5 minutes.
  • Now it’s time to add vegetable broth, salt, pepper and dried parsley. Cover with lid and bring to a boil. Turn off the heat and puree until smooth.
  • Taste it. Add more seasoning, if required.
  • Serve with a dollop of sour cream and salmon slices (both are optional).
