Ingredients
The following ingredients have 4 Servings
- 3 tbsp olive oil
- 1 onion (, medium)
- 3 garlic cloves
- 1.5 pound frozen green peas ((700 grams))
- 4 cups vegetable stock (or chicken broth (1 liter))
- 1 teaspoon himalayan salt ((see note))
- a pinch of pepper
- 1 tablespoon dried parsley
- a few slices of smoked salmon (, optional)
- sour cream (, optional)
Instruction
- In a pot, heat the oil. Add chopped onion and minced garlic. Sauté for a minute before adding frozen peas in. Cover with lid and let it cook for 5 minutes.
- Now it’s time to add vegetable broth, salt, pepper and dried parsley. Cover with lid and bring to a boil. Turn off the heat and puree until smooth.
- Taste it. Add more seasoning, if required.
- Serve with a dollop of sour cream and salmon slices (both are optional).
