Ingredients
The following ingredients have 3 Servings
- 2 ripe avocado (pitted and peeled (divided))
- 1/2 cup baby arugula
- 1/3 cup fresh basil
- 1/3 cup fresh chives
- 3 garlic cloves
- salt and black pepper
- 1/4 cup mayo
- 1/4 cup plain Greek yogurt
- 1 pound ground beef
- 1 large egg
- 1 tablespoon plain bread crumbs
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1 teaspoon Worcestershire sauce
- 6 slices multi-grain or seeded bread (lightly toasted)
- 4 romaine lettuce leaves
- 1 cup micro greens (I used an Italian blend)
- 1 cucumber (sliced)
- 4 ounces fresh sliced mozzarella cheese
Instruction
- To a high powered blender of food processor, add one half of one of the avocados, arugula, basil, chives, garlic, a dash of salt and black pepper to taste, mayo and Greek Yogurt. Puree until smooth, transfer to an airtight container and refrigerate until you are ready to use.
- In a large bowl, combine the ground beef, egg, bread crumbs, onion powder, garlic powder, Worcestershire sauce and a dash of salt and black pepper. Mix with clean hands or a heavy wooden spoon until the ingredients just come together. Form the meat into 3 equal-sized patties and set aside.
- Heat your grill or griddle pan over medium heat and spray the patties on both sides with a non-stick spray. Cook the burgers for 3-4 minutes (for medium to medium-rare) on each side or until cooked to your liking. Remove from heat and set aside to rest for a minute.
- Assemble your burgers, by spreading a layer of the green goddess sauce on the toasted bread. Layer remaining sliced avocado, lettuce, micro greens, cucumbers and mozzarella on top of each burger patty.
- Serve immediately and enjoy!
