Ingredients

The following ingredients have 4 Servings
  • 8 chicken thighs (bone-in, skin on)
  • 2 cups cherry tomatoes (sliced in half)
  • 2 cups black olives
  • 1 tbsp. fresh oregano leaves
  • 2 tbsp. olive oil
  • Sea salt and freshly ground black pepper

Instruction

  • Preheat oven to 375 F.
  • Place the chicken thighs on a baking dish.
  • Drizzle olive oil all over the chicken and season to taste.
  • Place in the oven and roast for 30 mins.
  • Add the cherry tomatoes, olives, and oregano leaves.
  • Return to the oven for another 15 to 20 minutes, or until the chicken is cooked through.
