Ingredients
The following ingredients have 12 Servings
- 1 to mato (small, chopped)
- ½ avocado (chopped into small pieces)
- ½ cup chickpeas
- ½ cup greek yogurt
- 12 crackers [I used breton gluten-free original with flax crackers]
- dried mint (to sprinkle (optional))
Instruction
- In a bowl whisk the greek yogurt till smooth.
- Add in the chickpeas and mix thoroughly.
- Arrange the crackers and spoon the yogurt chickpeas mixture on top using approximately 1 tablespoon per cracker.
- Top with chopped tomatoes, avocado and sprinkle dried mint on top (optional).
- Enjoy immediately.
