Ingredients

The following ingredients have 4 Servings
  • 1 large head iceberg lettuce (cut into quarters)
  • 1 cup tomatoes (chopped)
  • 1 large cucumber (peeled, seeded and chopped)
  • 1 small red onion (chopped)
  • 1/2 cup Kalamata olives (chopped)
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly cracked black pepper
  • 1 cup crumbled feta
  • Bleu cheese dressing
  • Fresh herbs

Instruction

  • Trim out the core from the bottom stem of the iceberg lettuce and discard. Quarter the head and set aside.
  • Chop the remaining ingredients.
  • Assemble by placing a quarter of the lettuce head on a plate, adding the dressing, then adding the toppings. End with salt and pepper. Fresh herbs on top are optional.
  • Serve chilled or at room temperature.
