Ingredients

The following ingredients have 2 Servings
  • 4 medium tomatoes (cut into 8 wedges)
  • 1/2 of a cucumber (peeled, halved and sliced)
  • 1/4 cup sliced green onions
  • 8 kalamata olives (sliced)
  • 3 Tbsp. low-fat feta cheese
  • 1/4 cup red wine vinegar
  • 2 Tbsp. olive oil
  • 1/4 tsp. garlic powder (or 1 clove garlic, minced)
  • 1/2 tsp. oregano
  • 1/4 tsp . basil
  • 1/8 tsp. sugar
  • 1/8 tsp pepper

Instruction

  • Combine tomatoes, cucumber, green onions, olives and cheese in a medium sized bowl.
  • In a small bowl, whisk together vinegar, oil, garlic, oregano, basil, sugar, salt and pepper. Pour over vegetables and toss to coat.
