Ingredients
The following ingredients have 2 Servings
- 4 medium tomatoes (cut into 8 wedges)
- 1/2 of a cucumber (peeled, halved and sliced)
- 1/4 cup sliced green onions
- 8 kalamata olives (sliced)
- 3 Tbsp. low-fat feta cheese
- 1/4 cup red wine vinegar
- 2 Tbsp. olive oil
- 1/4 tsp. garlic powder (or 1 clove garlic, minced)
- 1/2 tsp. oregano
- 1/4 tsp . basil
- 1/8 tsp. sugar
- 1/8 tsp pepper
Instruction
- Combine tomatoes, cucumber, green onions, olives and cheese in a medium sized bowl.
- In a small bowl, whisk together vinegar, oil, garlic, oregano, basil, sugar, salt and pepper. Pour over vegetables and toss to coat.
