Ingredients

The following ingredients have 4 Servings
  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon oregano
  • 1/2 clove garlic (minced)
  • 1 tablespoon lemon juice
  • salt and pepper
  • 6 cups Romaine lettuce
  • 1 cup grape or other tomatoes (sliced in half)
  • 1/2 cup Kalamata olives
  • 1/4 cup sliced red onion
  • 1 cup sliced English cucumber
  • 1 1/2 cups  tofu feta
  • Greek peperoncinis

Instruction

  • Mix dressing ingredients together.
  • In a bowl, mix all salad ingredients. Top with dressing, and serve with peperoncinis.
