Ingredients
The following ingredients have 4 Servings
- 1/2 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon oregano
- 1/2 clove garlic (minced)
- 1 tablespoon lemon juice
- salt and pepper
- 6 cups Romaine lettuce
- 1 cup grape or other tomatoes (sliced in half)
- 1/2 cup Kalamata olives
- 1/4 cup sliced red onion
- 1 cup sliced English cucumber
- 1 1/2 cups tofu feta
- Greek peperoncinis
Instruction
- Mix dressing ingredients together.
- In a bowl, mix all salad ingredients. Top with dressing, and serve with peperoncinis.
