Ingredients
The following ingredients have 4 Servings
- (4) round Round Pita Bread or Naan Bread
- 1 cup Hummus ((your favorite flavor))
- 10 ounces Grape Tomatoes ((sliced in half))
- 2 Tablespoons Extra Virgin Olive Oil
- 2 cups Romaine Lettuce ((chopped))
- 1 large Hot House Cucumber ((sliced and halved))
- 1/4 small Red Onion ((sliced))
- 1/2 cup Feta Cheese ((crumbled))
- 1 cup Plain Greek Yogurt
- 1 Tablespoon Extra Virgin Olive Oil
- 2 teaspoons Fresh Lemon Juice
- 2 teaspoons Red Wine Vinegar
- 1 teaspoon Salt
- 2 teaspoons Fresh Dill ((or 1/2 teaspoon Dried Dil))
- 2 Garlic Cloves ((minced))
- 1/2 cup Grated Cucumber ((squeeze in paper towel to drain off some water))
Instruction
- Preheat oven to 400 degrees or set on broil. Place pita or naan bread on baking sheet. Bake for about 5 minutes or until warmed.
- Spread hummus on each pita. In a small bowl, add grape tomatoes, olive oil, and a few pinches of salt. Let marinate for several minutes.
- Top pita bread with romaine lettuce, marinated tomatoes, cucumber, red onion, and feta cheese.
