Ingredients

The following ingredients have 5 Servings
  • 2/3 cup dry quinoa (or 2 cups cooked)
  • 1 1/3 cup of water or broth
  • 2 cups halved cherry tomatoes
  • 1 English cucumber (sliced and quartered)
  • A quarter of a red onion (thinly sliced)
  • 1/2 cup sliced kalamata olives
  • 1/2 cup crumbled feta cheese
  • 1/3 cup olive oil
  • 3 tbsp red wine vinegar
  • 2 tsp lemon juice
  • 1 garlic clove (minced)
  • Pinch of salt and freshly ground pepper

Instruction

  • Cook quinoa according to package directions. You can use broth instead of water for more flavour. Allow to cool.
  • Once cool, toss quinoa together with the cherry tomatoes, cucumber, onion, olives and feta cheese.
  • In a small bowl, mix together the ingredients for the dressing.
  • Pour desired amount of dressing onto the quinoa mixture and toss to combine. Allow to sit for at least half an hour for optimal flavour.
