Ingredients

The following ingredients have 4 Servings
  • 1 kg Potatoes
  • 1 tsp Garlic (Minced)
  • 1/2 cup Extra Virgin Olive Oil
  • 1 cup Vegetable Broth
  • 1/4 cup Lemon Juice
  • 2 tsp Dried Oregano
  • 1 tsp Paprika
  • Salt (To taste)
  • 1/2 tsp Black Pepper
  • Fresh Parsley (For garnishing)

Instruction

  • Pre heat the oven to 400 Degrees F (200 Degrees C)
  • Wash the potatoes and peel them.
  • Cut the potatoes into cubes.
  • Soak the potatoes in cold water for 30 minutes. This will remove the extra starch and potatoes will crisp up nicely.
  • Mix minced garlic, extra virgin olive oil, vegetable broth, lemon juice, oregano, paprika, salt and pepper in a bowl.
  • Pour this mixture over the potatoes.
  • Cover the pan with an aluminium foil and bake the potatoes for 40 minutes.
  • Remove the tray from the oven and take off the foil covering.
  • Mix the potatoes with the liquid and turn them upside down.
  • Now bake uncovered for another 40 minutes until the potatoes are golden brown.
  • Transfer the potatoes to the serving bowl.
  • Pour the remaining juice from the baking tray over the potatoes.
  • Garnish with chopped parsley and serve hot.
