Ingredients
The following ingredients have 4 Servings
- 1 kg Potatoes
- 1 tsp Garlic (Minced)
- 1/2 cup Extra Virgin Olive Oil
- 1 cup Vegetable Broth
- 1/4 cup Lemon Juice
- 2 tsp Dried Oregano
- 1 tsp Paprika
- Salt (To taste)
- 1/2 tsp Black Pepper
- Fresh Parsley (For garnishing)
Instruction
- Pre heat the oven to 400 Degrees F (200 Degrees C)
- Wash the potatoes and peel them.
- Cut the potatoes into cubes.
- Soak the potatoes in cold water for 30 minutes. This will remove the extra starch and potatoes will crisp up nicely.
- Mix minced garlic, extra virgin olive oil, vegetable broth, lemon juice, oregano, paprika, salt and pepper in a bowl.
- Pour this mixture over the potatoes.
- Cover the pan with an aluminium foil and bake the potatoes for 40 minutes.
- Remove the tray from the oven and take off the foil covering.
- Mix the potatoes with the liquid and turn them upside down.
- Now bake uncovered for another 40 minutes until the potatoes are golden brown.
- Transfer the potatoes to the serving bowl.
- Pour the remaining juice from the baking tray over the potatoes.
- Garnish with chopped parsley and serve hot.
