Ingredients

The following ingredients have 4 Servings
  • 2 - 12 inch pizza crusts (see Recipe)
  • 7-8 tbsp. tomato paste
  • 2 medium chicken breasts, poached and shredded
  • 30 thin slices red onion (15 per pizza), Lyonnaise cut
  • 30 thin slices red pepper (15 per pizza)
  • 1 tbsp. Greek seasoning (1/2 tbsp. per pizza)
  • 1/2 tbsp. dried basil (1 1/2 tsp. per pizza)
  • garlic salt, to taste
  • 12 medium cherry tomatoes, halved (6 per pizza)
  • 2 cups feta cheese, small cubes (1 cup per pizza)
  • 1 can (2.24 oz/64g) sliced black olives, drained (1/2 can per pizza)
  • freshly ground black pepper, to taste (I always use mixed peppercorns)
  • extra virgin olive oil, drizzled over

Instruction

  • Preheat oven to 500ºF.
  • Spread tomato paste evenly on both crusts. Add shredded chicken, red onion and red peppers. Add Greek seasoning, basil and garlic salt. Add cherry tomatoes, then feta cheese and black olives before seasoning with freshly ground black pepper. Drizzle olive oil on top.
  • Transfer to the preheated oven and bake for 10 to 12 minutes or until the crust is golden brown.
  • Remove from the heat and let it sit for 5 minutes before slicing.
