The following ingredients have 12 Servings
  • 16 ounces penne pasta (16 cups of water & 1 tablespoon of salt to boil until a dente. )
  • 6 ounces feta cheese
  • 1 large cucumber (peeled, and diced )
  • 1½ cup cherry tomatoes (quartered )
  • 1 large green bell pepper (cored, diced )
  • ½ cup red onion (diced )
  • ½ cup Kalamata olives (sliced )
  • 2 tablespoons fresh parsley (minced)
  • salt & pepper to taste
  • ½ cup extra virgin olive oil
  • ¼ cup red wine vinegar
  • 1½ tablespoons lemon juice
  • 1 clove garlic (pressed )
  • 1 teaspoon Dijon mustard
  • ¾ teaspoon dried oregano
  • ¼ teaspoon sea salt
  • ⅛ teaspoon fresh-cracked black pepper
