The following ingredients have 12 Servings
- 16 ounces penne pasta (16 cups of water & 1 tablespoon of salt to boil until a dente. )
- 6 ounces feta cheese
- 1 large cucumber (peeled, and diced )
- 1½ cup cherry tomatoes (quartered )
- 1 large green bell pepper (cored, diced )
- ½ cup red onion (diced )
- ½ cup Kalamata olives (sliced )
- 2 tablespoons fresh parsley (minced)
- salt & pepper to taste
- ½ cup extra virgin olive oil
- ¼ cup red wine vinegar
- 1½ tablespoons lemon juice
- 1 clove garlic (pressed )
- 1 teaspoon Dijon mustard
- ¾ teaspoon dried oregano
- ¼ teaspoon sea salt
- ⅛ teaspoon fresh-cracked black pepper
