Ingredients

The following ingredients have 6 Servings
  • 1 ½ pound raw large shrimp (peeled & deveined, tail intact)
  • 1 tablespoon + 1 teaspoon olive oil (divided)
  • 1 teaspoon dried oregano
  • ½ teaspoon + 1/8 teaspoon kosher salt (divided)
  • ½ teaspoon ground pepper
  • 18 cherry tomatoes
  • ½ red onion (rings cut in thirds)
  • ½ lemon
  • 1 tablespoon minced flat-leaf parsley

Instruction

  • If using wooden skewers, soak them in warm water for at least 30 minutes.
  • Preheat the grill to medium heat. Lightly brush the grates with oil.
  • Place the shrimp in a large bowl and toss with 1 tablespoon olive oil, oregano, ½ teaspoon salt and pepper.
  • In a separate bowl, toss the cherry tomatoes and onion pieces with the remaining 1 teaspoon olive oil and 1/8 teaspoon salt.
  • Thread the shrimp onto the skewers, alternating with the tomatoes and onion pieces.
  • Grill until the shrimp are just cooked through and the tomatoes are starting to split, about 2 minutes per side. Squeeze the lemon over top and garnish with parsley.
  • Serve with Roasted Pepper Feta Yogurt Sauce.
