Ingredients

The following ingredients have 4 Servings
  • 4 cups of green beans (trimmed and washed)
  • 2 roma tomatoes (finely diced)
  • 1/2 red onion (thinly sliced)
  • 1 shallot
  • 2 cloves of garlic
  • 1/4 cup wine vinegar
  • 1/2 cup olive oil
  • 1 teaspoon oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • zest of 1 lemon
  • juice of 1 lemon
  • 1/4 cup of crumbled feta (or more if you wish)

Instruction

  • Microwave beans for 5 minutes. Take them out and let cool.
  • In the meantime add the shallot, garlic, vinegar, olive oil, oregano, salt, pepper, lemon juice and lemon zest to a food processor and blend on high for a few seconds.
  • Add the beans, onions and tomatoes to a large bowl and mix with the dressing.
  • Top with the feta cheese and refrigerate until ready to eat.
  • Holds up well the next day too!
