Ingredients
The following ingredients have 4 Servings
- 4 cups of green beans (trimmed and washed)
- 2 roma tomatoes (finely diced)
- 1/2 red onion (thinly sliced)
- 1 shallot
- 2 cloves of garlic
- 1/4 cup wine vinegar
- 1/2 cup olive oil
- 1 teaspoon oregano
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- zest of 1 lemon
- juice of 1 lemon
- 1/4 cup of crumbled feta (or more if you wish)
Instruction
- Microwave beans for 5 minutes. Take them out and let cool.
- In the meantime add the shallot, garlic, vinegar, olive oil, oregano, salt, pepper, lemon juice and lemon zest to a food processor and blend on high for a few seconds.
- Add the beans, onions and tomatoes to a large bowl and mix with the dressing.
- Top with the feta cheese and refrigerate until ready to eat.
- Holds up well the next day too!
