Ingredients

The following ingredients have 4 Servings
  • 1 cup farro
  • 2 cups water
  • 1/4 cup kalamata olives, pitted, halved
  • 1 tablespoon chopped scallions
  • 1/4 cup fresh spinach, packed and torn into small pieces
  • 1 teaspoon chopped fresh oregano
  • 1/4 cup crumbled feta cheese
  • 1 lemon, zest and juice
  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon black pepper

Instruction

  • Place water in a small pot and bring to a boil. Add the farro, reduce heat to medium-low and simmer until farro is cooked and the water is absorbed. Remove from the pot, place in a bowl and allow to cool.
  • Add the olives, scallion, spinach, oregano, feta, lemon zest and juice and oil. Mix well and refrigerate until ready to serve.
