Ingredients

The following ingredients have 4 Servings
  • 1/2 lb chicken breast
  • 2 tbs greek seasoning blend
  • 2 tsps olive oil (divided)
  • 6 flour tortillas
  • 1/4 cup Hummus
  • 3/4 cup Mozzarella Cheese
  • 1/4 cup feta
  • 1/4 cup Cucumber (diced)
  • 1/4 cup Tomato (diced)
  • 1/4 cup Onion (diced)
  • 1 Avocado (diced)
  • 1/4 cup Tzatkiki
  • 1 tsp dill weed (fresh)

Instruction

  • Cut chicken breast into bite sized pieces, sprinkle with greek seasoning blend, and add to a large skillet with one tsp olive oil. 
  • Cook over medium heat for 6-7 minutes until cooked through. 
  • Preheat oven to broil on high
  • Dice cucumber, tomato, onion, and avocado.  Set aside. 
  • In a small fry pan, add remaining olive oil and turn to medium-high heat. Crisp the tortillas once oil is hot, by cooking 1 minute per side. Place them on a baking sheet
  • Add a dollop of hummus to the center of each tortilla
  • Top with Olives, Chicken, and Mozzarella Cheese divided equally between the flour tortillas
  • Broil on high 2-3 minutes, until the cheese is melted and golden
  • Top with a dollop of tzatkiki, a sprinkle of feta and diced cucumber, tomato, onion, and avocado as desired.
  • Garnish with fresh dill for added color
