Ingredients
The following ingredients have 4 Servings
- 1/2 lb chicken breast
- 2 tbs greek seasoning blend
- 2 tsps olive oil (divided)
- 6 flour tortillas
- 1/4 cup Hummus
- 3/4 cup Mozzarella Cheese
- 1/4 cup feta
- 1/4 cup Cucumber (diced)
- 1/4 cup Tomato (diced)
- 1/4 cup Onion (diced)
- 1 Avocado (diced)
- 1/4 cup Tzatkiki
- 1 tsp dill weed (fresh)
Instruction
- Cut chicken breast into bite sized pieces, sprinkle with greek seasoning blend, and add to a large skillet with one tsp olive oil.
- Cook over medium heat for 6-7 minutes until cooked through.
- Preheat oven to broil on high
- Dice cucumber, tomato, onion, and avocado. Set aside.
- In a small fry pan, add remaining olive oil and turn to medium-high heat. Crisp the tortillas once oil is hot, by cooking 1 minute per side. Place them on a baking sheet
- Add a dollop of hummus to the center of each tortilla
- Top with Olives, Chicken, and Mozzarella Cheese divided equally between the flour tortillas
- Broil on high 2-3 minutes, until the cheese is melted and golden
- Top with a dollop of tzatkiki, a sprinkle of feta and diced cucumber, tomato, onion, and avocado as desired.
- Garnish with fresh dill for added color
