The following ingredients have 7 Servings
- 4-6 chicken breasts (boneless, skinless)
- 1/4 cup olive oil
- 1/4 cup lemon juice (3 lemons)
- 1 1/2 tsp red wine vinegar
- 2 tsp minced garlic
- 1 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- **vegetables: onions, zucchini, tomatoes (if desired)
- 1 cup long grain rice (or 1 1/2 cups short grain rice)
- 2 TBSP olive oil
- 1 tsp salt
- 2-3 TBSP lemon juice
- 2 cups chicken broth (hot!)
