Ingredients

The following ingredients have 7 Servings
  • 4-6 chicken breasts (boneless, skinless)
  • 1/4 cup olive oil
  • 1/4 cup lemon juice (3 lemons)
  • 1 1/2 tsp red wine vinegar
  • 2 tsp minced garlic
  • 1 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • **vegetables: onions, zucchini, tomatoes (if desired)
  • 1 cup long grain rice (or 1 1/2 cups short grain rice)
  • 2 TBSP olive oil
  • 1 tsp salt
  • 2-3 TBSP lemon juice
  • 2 cups chicken broth (hot!)
