Ingredients
The following ingredients have 8 Servings
- 2 eggs
- 3/4 cup organic coconut sugar
- 2 tsp pure vanilla extract
- 1/2 cup + 1 Tbsp organic coconut oil (melted and cooled to almost room temp)
- 1/2 cup raw cacao powder (or unsweetened cocoa powder)
- 1 cup blanched almond flour
- 1/2 tsp baking soda
- 1/4 tsp sea salt
- 1/2 cup dark chocolate chips (homemade or Enjoy Life Brand)
- 1/3 cup dark chocolate chips (homemade or Enjoy Life brand)
- 2 Tbsp full fat coconut milk (from a can)
- 1/4 tsp vanilla extract
Instruction
- Preheat the oven to 350 degrees and grease a 9 pie dish generously with coconut oil. Alternatively, you can make this in a square pan as traditional brownies.
- In a large bowl, cream together the eggs, coconut sugar, vanilla extract, and coconut oil until smooth.
- In a medium bowl, combine the raw cacao powder, almond flour, salt, and baking soda.
- Slowly add the dry ingredients to the wet and blend until smooth.
- Finally, stir in the chocolate chips.
- Pour the batter into the pie dish and use a rubber spatula to get every last drop in there!
- Bake in the preheated oven for about 20 minutes or until the center has just about set but is still a bit gooey. Watch closely so you don't overbake!
- While the brownie bakes, make the topping:
- In a small saucepan, combine the topping ingredients, and stir constantly while melting over low heat. Once melted and shiny, remove from heat and allow to cool.
- You can spread the topping over the brownie pie while it's still a bit warm, but allow it to cool completely before cutting and serving.
