Ingredients

The following ingredients have 4 Servings
  • 1 3/4 cups oat flour, or ground oats
  • 2 tsps baking powder
  • 1/2 tsp sea salt
  • 1/4 tsp cinnamon, optional
  • 1/2 cup unsweetened coconut milk, cashew milk, or almond milk
  • 1/4 cup melted unrefined coconut oil
  • 2 large eggs
  • 3 Tbsps maple syrup, or raw honey
  • 1 tsp pure vanilla extract
  • fresh berries, to garnish

Instruction

  • Preheat your waffle iron.
  • Combine by whisking together; oat flour, baking powder, sea salt and cinnamon in a large mixing bowl, then set aside.
  • In another mixing bowl, whisk together milk, coconut oil, eggs, maple syrup and vanilla extract. Whisk until your mixture is creamy.
  • Next, make a well in your dry ingredients.
  • Pour your liquid mixture into the well and gently fold until all the ingredients are well combined.
  • Let your batter stand at room temperature for about 10 minutes.
  • Ladle about 1/2 cup of the prepared batter into your preheated waffle iron.
  • Cook the waffles until golden and crisp, about 2-3 minutes.
  • Garnish with fresh berries and serve immediately with additional maple syrup, or raw honey if desired.
