Ingredients
The following ingredients have 4 Servings
- 75 grams Arugula (aka Rocket)
- 125 grams Feta Cheese
- 2 cups Golden Watermelon (cubed)
- 1/4 cup Extra Virgin Olive Oil
- 1 tsp Dijon Mustard
- 1 tsp Lemon Juice
- 1 pinch Sea Salt
- 1 pinch Fresh Cracked Black Pepper
Instruction
- As you can pre-make the vinaigrette, I just toss all the ingredients into a shaker bottle and shake it up right before I pour it on salad. Due to it's contents, it can be stored for a few weeks in your fridge and used on multiple salads. In this regard I would suggest scaling up the recipe to make more than just this one serving.
- For the Salad: In a bowl, place the Arugula, Golden Watermelon Cubes, and chunks or cubes of the Feta Cheese. Drizzle with the dressing and toss. Sprinkle with a pinch of some Coarse Sea Salt and serve.
