The following ingredients have 4 Servings
  • 800 gr boneless skinless chicken thighs (cut into bite-size pieces)
  • 1 egg (beaten)
  • Cooking oil (for deep frying)
  • 1 Tbsp oyster sauce
  • 1/2 tsp sugar
  • 1/4 tsp ground white pepper
  • 1 cup potato starch ((not potato flour) or you can use cornstarch)
  • 1/4 tsp salt
  • 4 salted egg yolks
  • 100 gr butter
  • 1 handful curry leaves
  • 1 -2 Thai red chili (seeded and finely chopped, optional)
  • 1 tsp sugar (or more to taste)
