Ingredients
The following ingredients have 4 Servings
- 2 cups cooked whole wheat rotini noodles
- 1/2 cup whole kernel corn
- 1/2 cup sliced baby tomatoes (whatever variety you like)
- 1/2 cup sliced fresh basil
- 1/2 cup sliced sweet mini peppers
- 1/2 cup cucumber slices
- 1/4 cup Balsamic vinegar
- 1 Tbs Dijon mustard
- 1 tsp Onion Powder
- 1 tsp minced garlic
- 2 tsp dark brown sugar
- 1/2 cup olive oil
Instruction
- Cook noodles according to packet directions
- Mix together ingredients for balsamic dressing by either whisking in a bowl with a fork, or putting in a mason jar and shaking. Taste, and adjust flavor to preference. Set aside.
- Cut all ingredients into bite sized pieces,and toss together in a bowl
- Top with 1/3-1/2 cup balsamic dressing.*
- Toss and serve
- Refrigerate leftovers
