  • 60 g grated parmesan PLUS extra to serve
  • 2 Tbsp all purpose flour
  • a bowl of all purpose flour for dusting
  • 120 salted butter
  • 20 sage leaves
  • some Gnudi cooking water
  • pinch of salt
  • 2 tsp freshly grated parmesan cheese
  • freshly ground black pepper
