  • 4 ounces finely diced pancetta
  • 2 shallots (thinly sliced)
  • 6 ounces baby spinach
  • 1 1/2 teaspoons sherry wine vinegar
  • 1 1/2 teaspoons butter
  • 1 tablespoon pasta water ((from cooked gnocchi))
  • salt and pepper to taste
  • 1/2 cup grated parmesan cheese
