Ingredients
The following ingredients have 4 Servings
- 2 flax eggs
- 1/4 Cup brown sugar
- 3 Tbsp molasses
- 3/4 Tsp vanilla
- 1/2 Cup vegan butter
- 1 1/4 Cup apple (grated)
- 1 1/2 Ccup oat milk
- 1 Tsp baking powder
- 1 1/2 Tsp baking soda
- 1/2 Tsp ground ginger
- 1 1/4 Tsp cinnamon
- 1 1/2 Cup gluten free flour
- 1/2 Cup oats (gluten free )
- 1/2 cup vegan cream cheese
- 1/3 cup vegan butter
- 3 cup powdered sugar
- 1 cup pecans (chopped )
Instruction
- Preheat oven to 325 degrees and prepare two round cake pans.
- In a mixing bowl, prepare flax eggs by mixing flax seeds and water. Let rest.
- Grate the apple and place in a bowl.
- Add sugar, molasses, oil, vanilla, oat milk and grated apples to the flax egg. Stir to combine ingredients.
- Add in 1 cup of the gluten free flour then add the baking soda, baking powder, ginger, cinnamon, and gluten free oats. Stir with a spoon to combine.
- Pour the dry ingredients over the wet ingredients and stir again to combine.
- Pour the cake batter into the prepared pans.
- Bake for about 30 minutes. Remove from oven and set the apple cakes on racks to cool.
- While the apple cake is baking, add all cream cheese ingredients into a bowl and mix well to make the frosting
- Once the cakes are cool, add 1/3 of the frosting to the top of the bottom apple cake layer. Spread evenly to evenly distribute over the cake.
- Next add the top layer of cake and frost with the remaining vegan cream cheese frosting.
- Apply the fronting to the sides of the cake and then add crushed pecans around the cake or on the top to finish.
