Ingredients

The following ingredients have 18 Servings
  • 4 Cups of Chickpeas (about 2 15oz cans)
  • 2 Cups Chopped Broccoli (steamed)
  • 1 Tsp Dijon Mustard
  • 1/2 Tsp Onion Powder
  • 1/2 Tsp Garlic Powder
  • 1/2 Tsp Paprika
  • 1/4 Tsp Black Pepper
  • 1 1/2 Cups Chickpea "Panko" Crumbs*

Instruction

  • Before you begin, roast the chickpeas (according to this method, without spices) and crush in a plastic bag. Spread them in a plate and set aside.
  • Preheat the oven to 425°F.
  • In a large food processor, process all ingredients (except the chickpea crumbs), until you get a "chunky" hummus texture.
  • Form about 18 nuggets (1-2 tablespoons each) with the batter and roll them in the chickpea crumbs.
  • Place the breaded nuggets on a Silpat or parchment lined baking sheet and place in the oven to bake for 20 minutes. Flip and bake another 5 minutes.
  • Serve right away or freeze for later.
