The following ingredients have 4 Servings
- 1.5 lbs Skinless Chicken Tenders
- 1/2 Cup Vegan Soy-Free Mayo
- 1/2 to 1 Tsp Hot Sauce
- Tortilla Chip Coating:
- 1 7oz Bag of Reduced Fat Yellow Corn Chips (crushed)
- 1/2 Tsp Onion Powder
- 1/2 Tsp Garlic Powder
- 1/2 Tsp Cumin
- 1/4 Tsp Black Pepper
Instruction
- Preheat the oven to 375°F.
- In a bowl, combine the mayo and hot sauce, mix to combine.
- Pour out the crusted tortilla chips onto a plate and mix in the spices.
- Take each chicken tender and first dip in the spicy mayo, then roll in the crushed tortilla chips, before placing in a seasoned cast iron skillet or greased baking dish.
- Bake the coated tenders in the oven for 30-35 minutes, until chicken is throughly cooked through.
