The following ingredients have 4 Servings
  • 1.5 lbs Skinless Chicken Tenders
  • 1/2 Cup Vegan Soy-Free Mayo
  • 1/2 to 1 Tsp Hot Sauce
  • Tortilla Chip Coating:
  • 1 7oz Bag of Reduced Fat Yellow Corn Chips (crushed)
  • 1/2 Tsp Onion Powder
  • 1/2 Tsp Garlic Powder
  • 1/2 Tsp Cumin
  • 1/4 Tsp Black Pepper

Instruction

  • Preheat the oven to 375°F.
  • In a bowl, combine the mayo and hot sauce, mix to combine.
  • Pour out the crusted tortilla chips onto a plate and mix in the spices.
  • Take each chicken tender and first dip in the spicy mayo, then roll in the crushed tortilla chips, before placing in a seasoned cast iron skillet or greased baking dish.
  • Bake the coated tenders in the oven for 30-35 minutes, until chicken is throughly cooked through.
