Ingredients
The following ingredients have 4 Servings
- 2 lbs fresh peaches, sliced
- 3 tbsp coconut sugar ((or pure maple syrup))
- 1 tbsp tapioca flour
- 1 tsp cinnamon
- 1/4 tsp ground nutmeg
- 1/4 cup coconut butter, melted
- 1/2 cup coconut milk
- 1/4 cup pure maple syrup
- 1 tsp vanilla
- 1 cup almond flour
- 2 tbsp tapioca flour
- 1/4 tsp sea salt
Instruction
- Preheat grill or oven to 375° Fahrenheit or medium heat.
- Place filling ingredients in a large mixing bowl, and stir to evenly coat peaches. Transfer to cast iron skillet.
- In the same mixing bowl, add almond flour, tapioca flour and sea salt. Stir to combine.
- Add melted coconut butter, coconut milk, maple syrup and vanilla. Mix again to form batter.
- Use a spoon to drop dollops of the batter on top of the peaches, leaving some gaps and space around the perimeter of the skillet.
- Place skillet on the grill or in the oven and cook for 25-30 minutes. The peaches will get bubbly and the topping will turn golden brown. Once done serve and enjoy! Optional toppings like coconut ice cream or whipped coconut cream are a plus! ;)
