Ingredients

The following ingredients have 4 Servings
  • 2 lbs fresh peaches, sliced
  • 3 tbsp coconut sugar ((or pure maple syrup))
  • 1 tbsp tapioca flour
  • 1 tsp cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 cup coconut butter, melted
  • 1/2 cup coconut milk
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla
  • 1 cup almond flour
  • 2 tbsp tapioca flour
  • 1/4 tsp sea salt

Instruction

  • Preheat grill or oven to 375° Fahrenheit or medium heat. 
  • Place filling ingredients in a large mixing bowl, and stir to evenly coat peaches. Transfer to cast iron skillet. 
  • In the same mixing bowl, add almond flour, tapioca flour and sea salt. Stir to combine. 
  • Add melted coconut butter, coconut milk, maple syrup and vanilla. Mix again to form batter.
  • Use a spoon to drop dollops of the batter on top of the peaches, leaving some gaps and space around the perimeter of the skillet. 
  • Place skillet on the grill or in the oven and cook for 25-30 minutes. The peaches will get bubbly and the topping will turn golden brown. Once done serve and enjoy! Optional toppings like coconut ice cream or whipped coconut cream are a plus! ;)
