Ingredients
The following ingredients have 6 Servings
- 2 Tbsp Olive Oil (divided)
- 3 Cloves Garlic (finely diced)
- 1/4 Whole Red Onion (slices)
- 1 Cup White Wine
- 1/4 Cup Lemon Juice
- 1 Tbsp Oregano
- 12 Ounces Red & Yellow Grape Tomatoes
- 1/8 Whole Zucchini (spiralized)
- 1 LB Gluten Free Pasta
- 1 Tsp Salt
- 1 Tsp Black Pepper
Instruction
- In a pot of water, cook the pasta to al dente. Drain and set aside.Begin by heating the oil on medium heat. Add in the tomatoes and cook until they begin to blister. Remove from the pan and set aside. Add in the garlic and cook for 1 - 2 minutes. Do not let it brown. Add in the red onion and cook for a couple of minutes. Next, add in the white wine, lemon juice and oregano. Reduce by about half. Taste and then add in the salt and pepper.Add the noodles, spiralized zucchini and tomatoes. Mix well.Serve and enjoy!
