Ingredients

The following ingredients have 10 Servings
  • Gingerbread Loaf:
  • 1 Cup Gluten-Free All Purpose Flour
  • 1 Cup Teff Flour
  • 1/3 Cup Granulated Sweetener
  • 1 TB Psyllium Husk Powder
  • 2 Tsp Baking Powder
  • 2 Tsp Ground Ginger
  • 2 Tsp Cinnamon
  • 1/2 Tsp Ground Cloves
  • 1/2 Tsp Ground Nutmeg
  • 1/2 Cup + 1 TB Unsweetened Non-Dairy Milk
  • 1/2 Cup Unsweetened Applesauce
  • 1/4 Cup Molasses
  • 1/2 Tsp Pure Madagascar Bourbon Vanilla Extract
  • 1/2 Cup Plain Vegan Cream Cheese
  • 3 TB Molasses
  • 2 TB Powdered Erythritol
  • 1/4 Tsp Ground Ginger
  • 1/4 Tsp Cinnamon

Instruction

  • Preheat the oven to 375°F.
  • In a large mixing bowl, mix together all the dry loaf ingredients to combine. Then add the wet loaf ingredients and mix well to form a smooth, thick batter.
  • In a greased 8x4 loaf pan, pour in your batter and smooth out the top.
  • Bake the loaf in the oven for 25 minutes, remove and let cool.
  • For the frosting, simply allow the cream cheese to soften (you can microwave it for 30 seconds or so), and mix it together with the rest of the frosting ingredients.
  • Once the loaf is cool, pour the frosting over the top of the loaf before slicing and serving.
