Ingredients
The following ingredients have 8 Servings
- 2 cups all-purpose gluten-free flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1 tablespoon sugar or a sugar substitute
- 1 1/2 to 1 3/4 cups dairy-free milk
- 2 large eggs
- 2 1/2 cups golden sweet corn
- 1 cup chopped onions
- 1 cup cooked and diced ham, bacon, pancetta, or sausage
- Cooking spray
- Ketchup or maple syrup for serving
Instruction
- Heat pancake griddle, nonstick skillet, or a frying pan.
- Combine all-purpose gluten-free flour, baking powder, salt, pepper, and sugar in a large bowl.
- Add eggs to dairy-free milk in a small bowl and beat until combined.
- Pour milk and eggs into the flour mixture and stir until combined. Add corn, onions, and ham if used. If the batter seems too thick, add more milk.
- Grease pan with cooking spray. (You can also use vegetable oil, olive oil, butter, buttery spread, or grease leftover from cooking up the bacon.)
- Using a 1/4 cup measure, spoon out the batter onto the hot pan. Cook the pancake until each side is golden brown.
- Keep corn fritters warm in the oven until served on a parchment paper-lined baking sheet. Separate layers of fritters with a paper towel.
- Store leftover fritters in an airtight container in the refrigerator.
