Ingredients

The following ingredients have 4 Servings
  • 1 stick unsalted butter, room temperature
  • 1 cup sugar
  • 2 whole eggs
  • 1 tsp vanilla
  • 1/2 cup cocoa powder
  • 2 cups superfine almond flour
  • 1/4 cup coconut flour
  • 1/4 tsp baking soda
  • 1/8 tsp salt
  • 1/4 cup powdered sugar

Instruction

  • Preheat the oven to 350 degrees. Using a stand mixer, combine the butter and sugar until well mixed.  Add eggs, one at a time and mix well after each addition. Add vanilla.
  • Next add in the almond flour, coconut flour, cocoa powder, baking soda and salt.  Stir until mixed.
  • Roll them into 1 inch balls and roll in powdered sugar.  Place on a parchment-lined baking sheet.  Use a glass with a flat bottom to gently flatten them out.  
  • Cook for 8-10 minutes. Do not overcook. They will continue to cook when removed from the oven.
