Ingredients
The following ingredients have 60 Servings
- 1 3/4 cups gluten-free flour
- 1/2 cup tapioca flour
- 1 teaspoon Himalayan salt
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 coconut sugar
- 1 cup honey (or maple syrup)
- 1 cup ghee or butter (room temperature)
- 2 eggs
- 1 teaspoon vanilla
- 2 cups semi-sweet chocolate chips
Instruction
- Preheat the oven to 375 degrees F. Prepare a baking pan by lining it with a silicone liner or parchment paper.
- In a large bowl combine the flours, baking soda, cinnamon and salt. In a mixer cream together the butter, coconut sugar, honey and vanilla. Add eggs one at a time beating well to combine. Slowly add the flour mixture. Fold in the chocolate chips.
- Drop rounded tablespoons of the cookie dough onto the prepared baking sheet about 1 inch apart. Flatten slightly with the bottom of a glass. Bake for 8-10 minutes. Cool on the baking sheets for about 2 minutes to set then transfer to a cooling rack to cool completely.
