Ingredients

The following ingredients have 4 Servings
  • 1 cup fine sorghum flour OR fine brown rice flour
  • 1/4 cup ground golden flaxseed ((also called golden flaxmeal))
  • 1 ½ teaspoon baking powder
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/8 teaspoon nutmeg
  • 3/4 cup rice milk or oat milk
  • 1/2 cup fine shredded carrots ((about 1 medium/large carrot))
  • 1/2 cup + 3 Tablespoons packed brown sugar
  • 1/4 cup light tasting olive oil ((or other mild tasting oil))
  • 2 teaspoons vanilla extract
  • 1/4 cup + 1 Tablespoon dairy free and soy free cream cheese ((I used Daiya))
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2-3 Tablespoons rice milk or oat milk
