- 1 1/2 cup(s) hot water
- 1 cup(s) raisins
- - shortening, for greasing pans
- 1/2 cup(s) real butter or vegetable shortening
- 1 1/3 cup(s) light brown sugar, packed
- 1 - egg
- 2 cup(s) all-purpose flour
- 1 teaspoon(s) baking soda
- 1/2 teaspoon(s) salt
- 1 teaspoon(s) cinnamon
- 1/2 teaspoon(s) nutmeg
- 1 cup(s) tart apple, unpared, finely chopped
- 1 cup(s) chopped pecans or walnuts
- 1/4 cup(s) apple juice or milk
- GLAZE
- 1 1/2 cup(s) powdered sugar, sifted
- 1 tablespoon(s) real butter, softened
- 1/4 teaspoon(s) vanilla extract
- 1/8 teaspoon(s) salt (omit, if butter is salted)
- 2 1/2 tablespoon(s) light cream or milk
- - colored sugar crystals or decorations, if desired for holidays
Instruction
- Preheat oven to 350°F. Grease cookie sheets.
- Soak raisins in hot water, until ready to use; then drain.
- Cream butter (or shortening) and sugar, with electric mixer, until sugar is dissolved.
- Add egg, and mix well.
- Sift together the flour, baking soda, salt, cinnamon, and nutmeg.
- Add to creamed mixture, a half of a cup, at a time, while stirring with a wooden spoon.
- Drain raisins. Then, fold in apples, nuts, and raisins. Add apple juice (or milk), and mix well.
- Drop by teaspoonfuls onto greased cookie sheets.
- Bake for 10 to 15 minutes or until done. Makes 5-6 dozen.
- GLAZE: Mix together sifted powdered sugar and all other ingredients.
- Spread on cookies, while still hot. Sprinkle with colored sugar crystals or other decorations, if desired for the holidays.
