Ingredients

The following ingredients have 4 Servings
  • 1.5 cups All-Purpose Flour
  • 1 cup sugar
  • 1.5 teaspoons Baking Soda
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoon Salt
  • 3/4 cup Vegetable Oil
  • 2 eggs (slightly beaten)
  • 1 teaspoon Vanilla Extract
  • 1.5 cups Finely Shredded Carrots
  • 1 cup Powdered Sugar
  • 3 ounces Cream Cheese (softened)
  • 1 tablespoon Whole Milk
  • 1 teaspoon Vanilla Extract

Instruction

  • Preheat oven to 350 degrees.
  • In mixing bowl combine flour, sugar, baking soda, cinnamon and salt.
  • Once combined stir in oil, eggs and vanilla until well mixed. The batter will be the consistency of peanut butter {thick}.
  • Mix in shredded carrots. Once the carrots are added and mixed in the consistency thins down some but is still thicker than a normal cake batter.
  • Spread into greased and floured 9″ round cake pain. Bake for 40 to 45 minutes or until wooden pick inserted in center comes out clean.
  • Glaze
  • In a small mixing bowl beat the cream cheese until smooth.
  • Add the powdered sugar, milk and vanilla.
  • Pour glaze over warm cake. Allow to cool down and serve.
