Ingredients
The following ingredients have 4 Servings
- 1.5 cups All-Purpose Flour
- 1 cup sugar
- 1.5 teaspoons Baking Soda
- 1 teaspoon Ground Cinnamon
- 1/2 teaspoon Salt
- 3/4 cup Vegetable Oil
- 2 eggs (slightly beaten)
- 1 teaspoon Vanilla Extract
- 1.5 cups Finely Shredded Carrots
- 1 cup Powdered Sugar
- 3 ounces Cream Cheese (softened)
- 1 tablespoon Whole Milk
- 1 teaspoon Vanilla Extract
Instruction
- Preheat oven to 350 degrees.
- In mixing bowl combine flour, sugar, baking soda, cinnamon and salt.
- Once combined stir in oil, eggs and vanilla until well mixed. The batter will be the consistency of peanut butter {thick}.
- Mix in shredded carrots. Once the carrots are added and mixed in the consistency thins down some but is still thicker than a normal cake batter.
- Spread into greased and floured 9″ round cake pain. Bake for 40 to 45 minutes or until wooden pick inserted in center comes out clean.
- Glaze
- In a small mixing bowl beat the cream cheese until smooth.
- Add the powdered sugar, milk and vanilla.
- Pour glaze over warm cake. Allow to cool down and serve.
