Ingredients
The following ingredients have 4 Servings
- 1/2 cup dates
- 1 cup gluten free rolled oats
- 1/2 cup walnuts
- 1 teaspoon cinnamon
- 1 teaspoon ground ginger
- 1/4 teaspoon allspice
- 1/4 teaspoon nutmeg
- 2 teaspoons blackstrap molasses
- 1 teaspoon vanilla extract
- 1 tablespoon peanut butter
- Pinch salt
- 1/4 cup dark chocolate baking chunks
- 1 teaspoon coconut oil
Instruction
- Soak dates in hot water to soften.
- Add all ingredients to a food processor. Mix until well combined, stopping to scrape down the edges of the food processor.
- Form mixture into balls. You'll get 12-14 energy bites, depending upon how big you make them.
- Melt chocolate chunks in microwave at 30 second intervals until melted. Mine took 1 minute total.
- Add coconut oil to melted chocolate. Mix well.
- Dip each energy bite into the chocolate so that half the bite is covered in chocolate. Place on parchment paper and refrigerate so the chocolate can set.
