Ingredients

The following ingredients have 4 Servings
  • 1/2 cup dates
  • 1 cup gluten free rolled oats
  • 1/2 cup walnuts
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon allspice
  • 1/4 teaspoon nutmeg
  • 2 teaspoons blackstrap molasses
  • 1 teaspoon vanilla extract
  • 1 tablespoon peanut butter
  • Pinch salt
  • 1/4 cup dark chocolate baking chunks
  • 1 teaspoon coconut oil

Instruction

  • Soak dates in hot water to soften.
  • Add all ingredients to a food processor. Mix until well combined, stopping to scrape down the edges of the food processor.
  • Form mixture into balls. You'll get 12-14 energy bites, depending upon how big you make them.
  • Melt chocolate chunks in microwave at 30 second intervals until melted. Mine took 1 minute total.
  • Add coconut oil to melted chocolate. Mix well.
  • Dip each energy bite into the chocolate so that half the bite is covered in chocolate. Place on parchment paper and refrigerate so the chocolate can set.
