Ingredients
The following ingredients have 30 Servings
- 150g unsalted butter, at room temperature, chopped
- 1/2 cup brown caster sugar
- 1/3 cup golden syrup
- 1 egg
- 2 1/4 cups plain flour
- 1/2 tsp bicarbonate of soda
- 2 tsp ground ginger
- 1/2 tsp cinnamon
- 1/2 tsp mixed spice
- A pinch of nutmeg
- A pinch of white pepper
- 1 cup icing sugar mixture
- 2 tsp milk
- 1 tsp butter
- 1 tsp vanilla extract
Instruction
- Preheat oven to 180C/160C fan forced. Line 2 baking trays with baking paper.
- Use electric beaters to beat the butter and sugar until pale and creamy. Beat in the golden syrup and egg until combined.
- Sift the flour, bicarbonate of soda, ginger, cinnamon, mixed spice, nutmeg and pepper into a bowl. Add to the butter mixture in 2 batches, beating after each addition until just combined.
- Roll level tbs of the dough into balls. Place on prepared trays. Bake, swapping the trays halfway through cooking, for 15 minutes or until golden. Set aside on trays for 5 minutes to cool slightly before transferring to a wire rack to cool completely.
- Combine the icing sugar, milk, butter and vanilla in a small heatproof bowl. Place the bowl over a saucepan of simmering water (bowl should not touch water). Cook, stirring occasionally, for 3 - 5 minutes or until smooth. Remove pan from heat. Drizzle or pipe the biscuits with the icing. Set aside for 10 minutes to set.
