Ingredients

The following ingredients have 30 Servings
  • 150g unsalted butter, at room temperature, chopped
  • 1/2 cup brown caster sugar
  • 1/3 cup golden syrup
  • 1 egg
  • 2 1/4 cups plain flour
  • 1/2 tsp bicarbonate of soda
  • 2 tsp ground ginger
  • 1/2 tsp cinnamon
  • 1/2 tsp mixed spice
  • A pinch of nutmeg
  • A pinch of white pepper
  • 1 cup icing sugar mixture
  • 2 tsp milk
  • 1 tsp butter
  • 1 tsp vanilla extract

Instruction

  • Preheat oven to 180C/160C fan forced. Line 2 baking trays with baking paper.
  • Use electric beaters to beat the butter and sugar until pale and creamy. Beat in the golden syrup and egg until combined.
  • Sift the flour, bicarbonate of soda, ginger, cinnamon, mixed spice, nutmeg and pepper into a bowl. Add to the butter mixture in 2 batches, beating after each addition until just combined.
  • Roll level tbs of the dough into balls. Place on prepared trays. Bake, swapping the trays halfway through cooking, for 15 minutes or until golden. Set aside on trays for 5 minutes to cool slightly before transferring to a wire rack to cool completely.
  • Combine the icing sugar, milk, butter and vanilla in a small heatproof bowl. Place the bowl over a saucepan of simmering water (bowl should not touch water). Cook, stirring occasionally, for 3 - 5 minutes or until smooth. Remove pan from heat. Drizzle or pipe the biscuits with the icing. Set aside for 10 minutes to set.
