Ingredients

The following ingredients have 4 Servings
  • 14 ozs Spaghetti
  • cilantro
  • 2 Tbsps Oil
  • fresh ginger (peeled and finely chopped)
  • 2 cloves garlic cloves (finely chopped)
  • 4 scallions (finely sliced)
  • 16 ozs shrimp (shelled)
  • 2 cups frozen peas (thawed)
  • 0.5 cup fish stock
  • 2 Tbsps lemon juice

Instruction

  • Cook the spaghetti according to the packet instructions. When it is cooked, drain well and refresh under cold running water.
  • Meanwhile, reserve a few sprigs of coriander for the garnish and finely chop the rest.
  • Heat the oil in a large pan. Add the ginger and garlic, fry for 2 minutes then add the spring onions.
  • Stir fry for 2 minutes then add the prawns, fry for 1 minute then add the peas and the fish stock.
  • Let bubble then season with salt, pepper and lemon juice and stir in the spaghetti and the chopped coriander. Heat through and serve garnished with the reserved coriander sprigs.
