Ingredients
The following ingredients have 4 Servings
- 14 ozs Spaghetti
- cilantro
- 2 Tbsps Oil
- fresh ginger (peeled and finely chopped)
- 2 cloves garlic cloves (finely chopped)
- 4 scallions (finely sliced)
- 16 ozs shrimp (shelled)
- 2 cups frozen peas (thawed)
- 0.5 cup fish stock
- 2 Tbsps lemon juice
Instruction
- Cook the spaghetti according to the packet instructions. When it is cooked, drain well and refresh under cold running water.
- Meanwhile, reserve a few sprigs of coriander for the garnish and finely chop the rest.
- Heat the oil in a large pan. Add the ginger and garlic, fry for 2 minutes then add the spring onions.
- Stir fry for 2 minutes then add the prawns, fry for 1 minute then add the peas and the fish stock.
- Let bubble then season with salt, pepper and lemon juice and stir in the spaghetti and the chopped coriander. Heat through and serve garnished with the reserved coriander sprigs.
