Ingredients

The following ingredients have 18 Servings
  • Makes about 1 1/2 dozen scones
  • 2 cups spelt flour (or sub all purpose)
  • 1 tsp. dried ginger
  • 1/4 tsp. salt
  • 1 tbsp. baking powder
  • 1/3 cup maple syrup
  • 1/3 cup coconut oil
  • 1 tsp. vanilla
  • 3/4 cup non-dairy yogurt
  • 1 tbsp. fresh grated ginger
  • 1 cup diced fresh peaches (about one large peach)

Instruction

  • Preheat oven to 350.
  • Mix first four ingredients in medium mixing bowl. Add syrup, oil, vanilla, yogurt and fresh ginger. Fold in peaches.
  • Drop rounded 1/4 cup sized scoops onto greased baking sheets.
  • Bake 16-18 minutes.
