Ingredients
The following ingredients have 4 Servings
- 1 cup light corn syrup
- 3 large eggs, (room temperature)
- 1 cup granulated sugar
- 2 tablespoons unsalted butter, (melted)
- 1 teaspoon vanilla extract
- 2 cups chopped pecans
- ¾ cup sweetened baked coconut
- ¾ cup semi-sweet mini chocolate chips
- 1 9-inch par-baked pie crust
Instruction
- Pre-heat oven to 350°F.
- In a large bowl, whisk together the corn syrup, eggs, sugar, butter, and vanilla until pale and well-blended. Stir in the pecans and coconut.
- Sprinkle the chocolate chips into the pie crust. Pour the filling over the chocolate chips and smooth the top.
- Bake for 80-85 minutes until the filling no longer wiggles when shaken gently.
