Ingredients

The following ingredients have 4 Servings
  • 1 cup light corn syrup
  • 3 large eggs, (room temperature)
  • 1 cup granulated sugar
  • 2 tablespoons unsalted butter, (melted)
  • 1 teaspoon vanilla extract
  • 2 cups chopped pecans
  • ¾ cup sweetened baked coconut
  • ¾ cup semi-sweet mini chocolate chips
  • 1 9-inch par-baked pie crust

Instruction

  • Pre-heat oven to 350°F.
  • In a large bowl, whisk together the corn syrup, eggs, sugar, butter, and vanilla until pale and well-blended. Stir in the pecans and coconut.
  • Sprinkle the chocolate chips into the pie crust. Pour the filling over the chocolate chips and smooth the top.
  • Bake for 80-85 minutes until the filling no longer wiggles when shaken gently.
