  • ½ teaspoon ajwain [carom seeds]

  • salt (to taste)
  • 1-2 teaspoon vegetable oil
  • 1 inch ginger
  • 2-3 garlic cloves
  • 2 medium onion
  • 2 tablespoons vegetable oil
  • 3/4 cup whisked yogurt (at room temperature)
  • 1 teaspoon cumin seeds
  • 1.25 teaspoon coriander powder
  • ½ teaspoon garam masala powder
  • ¼ teaspoon turmeric powder
  • 1/4 teaspoon dried mango powder [amchur]
  • 1 teaspoon sugar (optional)
  • 1 teaspoon kasuri methi (crushed [dried fenugreek leaves])
  • water (as required)
