- 1 lb. extra firm tofu, (drained, pressed at least 15 minutes, and cut into 1/2 inch cubes)
- 3 cups cauliflower florets
- 1 tbsp. lemon juice
- 2 tsp. olive oil
- 2 garlic cloves, (minced)
- 4-8 inch flour tortillas
- 1 avocado, (sliced)
- 2 scallions, (chopped)
