  • 1 lb. extra firm tofu, (drained, pressed at least 15 minutes, and cut into 1/2 inch cubes)
  • 3 cups cauliflower florets
  • 1 tbsp. lemon juice
  • 2 tsp. olive oil
  • 2 garlic cloves, (minced)
  • 4-8 inch flour tortillas
  • 1 avocado, (sliced)
  • 2 scallions, (chopped)
