Ingredients

The following ingredients have 3 Servings
  • 2 large potatoes (boiled, peeled and cubed)
  • 2 teaspoons rice flour
  • 1 teaspoon chili powder
  • 1/4 teaspoon turmeric powder
  • Salt
  • 4-8 garlic pods (peeled and minced)
  • 1 large onion (thinly sliced)
  • 10-12 curry leaves
  • 1 teaspoon mustard seeds
  • 1 teaspoon fennel seeds

Instruction

  • Boil or steam the potatoes. peel the skin and cube the potatoes.
  • Take the cubed potatoes in a mixing bowl. Add salt, turmeric powder, chili powder and 1 teaspoon oil. Mix and toss well. Add 2 teaspoons rice flour and toss well too.
  • Heat 1 tablespoon gingely oil in a kadai. Add mustard seeds and let them splutter. Add fennel seeds and saute well. Add curry leaves, minced garlic and saute well. Add finely chopped onions and saute till color changes slightly.
  • Add the potatoes and saute well. Saute and cook in medium flame till the potatoes turn crispy. Serve garlic potato fry hot with rice and rasam.
