Ingredients

The following ingredients have 4 Servings
  • 14 oz bowtie pasta
  • 2 tablespoons olive oil
  • 1 medium onion, thinly sliced
  • 4 cloves garlic, minced
  • 14 oz mushrooms, sliced
  • 5 cups baby spinach
  • 1/2 cup vegetable or chicken broth
  • 1 teaspoon dried thyme
  • 1/2 cup parmesan cheese, freshly grated
  • 1/2 cup heavy cream
  • 1/2 teaspoon red pepper flake
  • Kosher salt and freshly ground black pepper, to taste

Instruction

  • In a large pot of salted boiling water, cook pasta until al dente.
  • In a large skillet over medium heat, heat the olive oil. Add onion and sauté until starting to soften, about 2 minutes.
  • Add mushrooms and cook until browned, about 3 minutes more. Add garlic and cook 30 seconds.
  • Stir in spinach and cook until wilted. Season with salt and pepper.
  • Stir in vegetable broth and cream and let simmer until sauce reduces a bit, about 2 minutes.
  • Add parmesan, pepper flakes, and thyme and cook until cheese has melted and sauce has thickened to your liking.
  • Stir in pasta, adjust seasoning as needed, and enjoy!
