Ingredients
The following ingredients have 4 Servings
- 14 oz bowtie pasta
- 2 tablespoons olive oil
- 1 medium onion, thinly sliced
- 4 cloves garlic, minced
- 14 oz mushrooms, sliced
- 5 cups baby spinach
- 1/2 cup vegetable or chicken broth
- 1 teaspoon dried thyme
- 1/2 cup parmesan cheese, freshly grated
- 1/2 cup heavy cream
- 1/2 teaspoon red pepper flake
- Kosher salt and freshly ground black pepper, to taste
Instruction
- In a large pot of salted boiling water, cook pasta until al dente.
- In a large skillet over medium heat, heat the olive oil. Add onion and sauté until starting to soften, about 2 minutes.
- Add mushrooms and cook until browned, about 3 minutes more. Add garlic and cook 30 seconds.
- Stir in spinach and cook until wilted. Season with salt and pepper.
- Stir in vegetable broth and cream and let simmer until sauce reduces a bit, about 2 minutes.
- Add parmesan, pepper flakes, and thyme and cook until cheese has melted and sauce has thickened to your liking.
- Stir in pasta, adjust seasoning as needed, and enjoy!
