Ingredients
The following ingredients have 4 Servings
- 2 cups mushrooms (halved)
- 2 cups cherry tomatoes
- 1 bell pepper (seeded and chopped)
- 1 cup green beans (ends trimmed)
- 2 large zucchinis (sliced)
- 1 tsp. dried rosemary
- 1/2 tsp. black pepper
- 1 tsp. salt
- 2-3 tbsp. olive oil
- 2 tbsp. olive oil
- Juice of 2 limes (approximately 4 tbsp.)
- 4 garlic cloves (crushed, to taste)
- Sea salt and pepper (to taste)
- 4 10 oz. steaks
Instruction
- Preheat oven to 400 F.
- Combine all the vegetables in a bowl, add the oil and seasonings, then mix well.
- Transfer to a roasting tray and place in the oven.
- Allow roasting for 30-45 minutes until the vegetables are cooked and starting to caramelize.
- For the steak, combine the oil, lime juice, garlic, and seasoning in a small bowl, then pour over the steak.
- Allow the steak to marinate for 10 minutes, then cook on a hot griddle until done to your preference. Allow the steak to rest for a few minutes.
- Serve immediately with the roasted vegetables.
