Ingredients

The following ingredients have 4 Servings
  • 2 cups mushrooms (halved)
  • 2 cups cherry tomatoes
  • 1 bell pepper (seeded and chopped)
  • 1 cup green beans (ends trimmed)
  • 2 large zucchinis (sliced)
  • 1 tsp. dried rosemary
  • 1/2 tsp. black pepper
  • 1 tsp. salt
  • 2-3 tbsp. olive oil
  • 2 tbsp. olive oil
  • Juice of 2 limes (approximately 4 tbsp.)
  • 4 garlic cloves (crushed, to taste)
  • Sea salt and pepper (to taste)
  • 4 10 oz. steaks

Instruction

  • Preheat oven to 400 F.
  • Combine all the vegetables in a bowl, add the oil and seasonings, then mix well.
  • Transfer to a roasting tray and place in the oven.
  • Allow roasting for 30-45 minutes until the vegetables are cooked and starting to caramelize.
  • For the steak, combine the oil, lime juice, garlic, and seasoning in a small bowl, then pour over the steak.
  • Allow the steak to marinate for 10 minutes, then cook on a hot griddle until done to your preference. Allow the steak to rest for a few minutes.
  • Serve immediately with the roasted vegetables.
