Ingredients
The following ingredients have 4 Servings
- 1 (4-5 lbs.) bone-in beef rib roast (,preferably center cut)
- 4 cloves garlic (,peeled and thinly sliced lengthwise)
- 1/2 cup chopped parsley
- 1 Tbs. chopped fresh rosemary
- 1 Tbs. chopped fresh sage leaves
- 1 Tbs. chopped fresh thyme leaves
- 1 Tbs. olive oil
- 2 tsp. prepared horseradish
- 1 tsp. kosher salt
- 1/2 tsp. freshly ground black pepper
Instruction
- Preheat oven to 350F.
- Place beef in roasting pan. Using point of a paring knife, cut slits into roast and stuff slits with garlic slices.
- In small bowl combine parsley, rosemary, sage, thyme, olive oil, horseradish, kosher salt and pepper and press herb mixture over top of roast.
- Roast 15-20 minutes per pound or until meat thermometer reads 130F-135F for medium rare.
- Let roast rest 10 minutes before carving.
