  • 1 stick unsalted butter (softened at room temperature)
  • 1/8 cup chopped herbs (I use a combination of fresh thyme and cilantro)
  • 1 clove garlic (minced finely with a knife)
  • 1/8 teaspoon kosher salt
  • 4 4-ounce halibut fillets
  • 2 tablespoons herb compound butter ((from recipe above))
  • 3 scallions (trimmed and sliced in thirds)
