Ingredients

The following ingredients have 4 Servings
  • 3/4 cup avocado oil
  • 1/4 cup extra virgin olive oil
  • 1 large egg
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 1/4 cup roughly chopped fresh chives
  • 1 small clove garlic (crushed)
  • immersion blender
  • tall glass jar

Instruction

  • Combine all ingredients together into a tall glass jar or mason jar. Make sure to use a jar that is wide enough to fit your immersion blender but not so wide that it won't be able to properly blend your mayo.
  • Place blade of immersion blender into jar at the bottom. Turn on highest setting and slowly move the blade up and down.
  • The mayo should emulsify within seconds and be completely emulsified and thick within 45 seconds to 1 minute.
  • Cover and store in fridge until ready to use. Use within 5 days or discard. Enjoy!
